FISH CURRY MASALA

coriander seeds 1/2 kg
red chilli 1/4 kg
cumin seeds 25 gms
black pepper 25 gms
fenugreek 2 tsp
mustard 1 tsp
rice 1 tsp
dry curry leaves as reqd.
turmeric powder 2 tsp

Fry all the ingredients for few minutes without oil and grind it.

SAMBAR POWDER

red chilli 1 cup
coriander seeds 1 cup
whole mong dal 1/4 cup
black channa dal 1/4 cup
toor dal 2 tsp
channa dal 2 tsp
mustard seeds 1 tsp
rice 1 tsp
fenugreek 1 tsp
black pepper 2 tsp
turmeric powder 1 tsp

Fry all the ingredients for few minutes without oil and grind it.

RASAM POWDER

red chilli 1/2 cup
coriander seeds 1 cup
black pepper 1/2 cup
cumin seeds 1/4 cup
toor dal 1/4 cup
chenna dal 1 tsp
turmeric powder 1 tsp
asafoetida 1/2 tsp
 

Fry all the ingredients for few minutes without oil and grind it.

GARAM MASALA

coriander seeds 1/2 cup
black peper 1/4 cup
cinnamon 2 piece
glove 2 tsp
cardamom 1 tsp
poppy seeds 1/8 cup
cumin seeds 1/8 cup
aniseed(sombu) 1/8 cup
bay leaves 10 gms
   
   

Fry all the ingredients for few minutes without oil and grind it.

IDLI CHILLI POWDER

dehusked black gram 1/2 cup
red chilli 20 nos.
coriander seeds 1 t.s
bengal gram dhal 1 t.s
tamarind little
rock salt 1 1/2 t.s
   
   

Heat one tablespoon of oil and fry all the ingredients till golden brown. Bound together with salt and tamerind and grind it.
