RICH XMAS FRUIT CAKE
1.Chop All Fruits and Mix with Rum, Jam, and Honey and store in a tightly sealed jar for atleast 3 to 5 hours.
2.Preheat oven for 250.
3.Sieve maida baking powder & all spices.
4.Beat butter &sugar until they are light & creamy.
5.Add eggs one by one beat very well.
6.Add the lemon juice and vanilla essence to the fruit mixture.
7.Add the flour into fruit mixture.
8.Add this mixture to the butter and egg mix.
9.Mix coffee powder with little warm water.&mix with the above.
10.Pour it into baking pan, bake it for 2 to 2 1/2 hours or Test the cake by
inserting a skewer or knife into it-when pulled out it should be clean but dump.
